Parsnip, Leek and Root Parsley Soup

Sweat off your onions and garlic.  Add leeks and continue to cook until everything is melding together nicely.  Add broth and chopped parsnips and root parsley – cook until soft.  You could make this a creamy soup by adding coconut milk or cream, but this is not necessary.  Season and serve with a sprig of fresh parsley in the bowl.
