Four Season Harvest – Wrapping up the Winter CSA

The 6th and final pick-up is ahead, and here’s a sneak peak of what Winter CSA members will be taking home for their final pick-up:

Carrots, Beets, Potatoes, Butternut Squash!, Onions, Garlic, Turnips and Black Spanish Radishes!

Here’s a wonderful recipe for a winter rainbow salad!

Winters Rainbow Salad – Black Spanish Radish, Carrots & Beets!

1 lb black Spanish radishes, scrubbed and grated (this could be 1 big one, or 2-3 smaller ones)

1 cup coarsely grated carrots

1 cup coarsely grated beets (purple, striped & golden!!!)

1/4 cup thinly sliced onion

2 1/2 tablespoons fresh lemon juice

1/2 teaspoon maple syrup

2 tablespoons olive oil

a sprinkling of dried herbs for seasoning (mint, oregano, thyme, savory, etc.)

black spanish radishSince December we’ve been running a pilot program, testing our winter vegetable storage capabilities.  While most of the products for our winter CSA were grown at Kolapore Gardens, I did bring in some supplemental veggies from friendly farms in South-Western Ontario.  All produce used to supplement our own Kolapore-grown vegetables, are either certified organic, or at least organically grown by a reputable grower that we know.  Below is a short list of what we’ve had to offer for this years Winter CSA… Unless otherwise noted, all crops were grown at Kolapore Gardens.





Potatoes (a mix from Kolapore Gardens, Laepple Organic Farm, and Creek Shore Farms)



Cabbage (a mix from Kolapore Gardens and Fertile Ground CSA)

Giant Kohlrabi

Beets (Fertile Ground CSA)


Squash (from Pfennings Organic Farm and Creek Shore Farms)

Daikon Radish

Black Spanish Radish (from Ignatius Farm)

Italian Parsley


I am very grateful to have such a brave bunch of people willing to experiment in eating locally year-round – thank you!  Your support, as well as having warm and cozy pick-up locations, has made this Winter CSA thing A WHOLE LOT OF FUN!
