Here’s a wonderful recipe for a winter rainbow salad!
Winters Rainbow Salad – Black Spanish Radish, Carrots & Beets!
1 lb black Spanish radishes, scrubbed and grated (this could be 1 big one, or 2-3 smaller ones)
1 cup coarsely grated carrots
1 cup coarsely grated beets (purple, striped & golden!!!)
1/4 cup thinly sliced onion
2 1/2 tablespoons fresh lemon juice
1/2 teaspoon maple syrup
2 tablespoons olive oil
a sprinkling of dried herbs for seasoning (mint, oregano, thyme, savory, etc.)
Since December we’ve been running a pilot program, testing our winter vegetable storage capabilities. While most of the products for our winter CSA were grown at Kolapore Gardens, I did bring in some supplemental veggies from friendly farms in South-Western Ontario. All produce used to supplement our own Kolapore-grown vegetables, are either certified organic, or at least organically grown by a reputable grower that we know. Below is a short list of what we’ve had to offer for this years Winter CSA… Unless otherwise noted, all crops were grown at Kolapore Gardens.
